Zesty Banana Bread (vegan and sugar-free)

*Ingredients: 


- Unbleached all-purpose flour (1 ¾ cups)
- Baking powder (1 tablespoon)
- Cinnamon (2 tablespoons)
- Pinch of salt
- Very ripe bananas (4)
- Melted and cooled coconut oil (1/3 cup)
- Vanilla extract or maple syrup (1/2 tablespoon)
- Soy or almond milk (1/3 cup)
- Zesty chocolate to taste
- Zesty H2 cream to taste
- Chopped hazelnuts to taste

**Preparation**

1- Preheat the oven to 180ºC (356ºF).

2- In a large bowl, start by mixing the dry ingredients. Add the flour, baking powder, cinnamon, salt, and mix. Add 3 mashed bananas, coconut oil, vanilla extract, plant-based milk, chocolate, and chopped hazelnuts. Mix until a homogeneous batter forms.

3- Pour the batter into a greased and floured loaf pan. Finish by placing a banana cut in half on top.

4- Bake in the oven for about 40 minutes or until a toothpick comes out clean when inserted.

5- Remove from the oven and let it cool slightly. Unmold and let it cool a bit more.

6- For the topping, spread Zesty H2 cream and sprinkle chopped hazelnuts.
