Banana Bread with Zesty

Banana bread is an excellent option for both a beach snack and a break during the workday. It is very easy to prepare and allows you to have snacks for the entire week.

This recipe is a good choice because it has a high fiber content, making it a satisfying snack. It is vegan and includes aquafaba as a substitute for eggs. The Zesty chocolate in the filling makes the recipe even more special, with a touch of chocolate that is not overly sweet.

Ingredients:

— 6 tablespoons of aquafaba (liquid from chickpea cooking)
— 3 medium bananas + 1 banana for decoration
— 60ml of plant-based milk
— 1 teaspoon of lemon juice
— 240g of spelt and sweet potato flour
— 1/4 teaspoon of salt
— 1 teaspoon of baking soda
— Cinnamon to taste
— 75ml of coconut oil
— 115g of coconut sugar
— Zesty chocolate chunks with peanut butter

Preparation:

1. Using an electric mixer, beat the aquafaba at medium speed until you get a uniform foam.

2. Add the plant-based milk and lemon juice and let it rest.

3. In a bowl, combine the coconut oil and coconut sugar. Then, add the aquafaba to the previous mixture until well incorporated.

4. Add to the mixture the plant-based milk with lemon, add the previously mashed bananas with a fork, and then add the flour, salt, cinnamon, baking soda, and Zesty chocolate chunks.

5. Fold with a spatula, pour the batter into the pan, and bake for approximately 40 minutes.
