Healthy Vegan Pumpkin Pie

Base Ingredients:

  • 385g of cooked and well-drained pumpkin
  • 60g of coconut flour
  • Flaxseed egg: 30g of flaxseed for 60ml of water
  • 1 teaspoon of cinnamon
  • 1 coffee spoon of nutmeg
  • 1 coffee spoon of ground cloves
  • 1 tablespoon of vanilla

Prepare the flaxseed egg. Blend all the ingredients in a blender. Put the dough in the mold and shape it until it is uniform. Bake in a preheated oven at 180 degrees for about 30 minutes.

Filling Ingredients:

  • 200ml of coconut milk
  • 160g of Zesty hazelnut chocolate

Boil the coconut milk. Turn off the heat and add the chocolate. Stir well until you get a uniform mixture. Put it on top of the base and refrigerate.

Topping Ingredients:

  • 1 can of coconut milk

Using an electric mixer, beat the coconut milk at the highest speed. The coconut milk should be very cold (put it in the refrigerator 12 hours before). Put the cream on the already chilled pie. Decorate and enjoy.
